Cilantro-Chipotle Tilapia. Off the chain.

So I skimped on lunch today cause I was in the zone, moving and playing some COD. Not a good excuse for missing a meal right, so I decided to totally redeem myself at dinner. I wish I could take credit for this easy, quick, mouth watering recipe, but I have to give the credit to my genius smart phone with this awesome smart app. called, Epicurious. What will those nerds come up with next. So I have tried this recipe before, I did not have all the right tools(blender) but I decided to go hard anyway, and I failed hard. Failure was not an option this time, I got my blender.
So for this little number you will need 2 tilapia fillets, 1 and half cups of cilantro, 3/4 teaspoon salt, 1/2 teaspoon pepper(fresh ground rookie), 2 tablespoons veggy oil, 1 tablespoon water, 1/2 teaspoon ground cumin, and last but certainly not least, 1 chipotle pepper canned with sauce. But if you wanna go hard and feel the burn, make it 2 chipotle peppers Utah.
Alright so now take all your ingredients that are not a white flaky fish and toss them into your chopper, blender, pureer, whatever you want to call it and blend, and blend, and blend, thats it and blend till you got yourself a nice smooth whatever. Slather your fish.
Once you've slathered to your liking, place your fish on some foil that you have on a cooking sheet. O ya pre-heat your oven this aint kindergarten, broil, rack 4 to 5 inches from top. Now put your fish pan into the oven for 6 to 9 min, my fish cooked for 7. Remove
Conclusion, I did not have anything else to cook with this meal so I grabbed a few white corn tortillas, butter, stove, BOOM. This meal, was of the chain. Spicy, tons of flavor, easy E, will def be making it again. For next time I will probable add some fresh lemons to squeeze on there to really blow my mind. Redeemed. Keep it real.
