I also like to start my day with a hearty breakfast, so I dove into the fridge and pulled out 2 eggs, leftover sausage and brisket from Mo's in Houston, Tx, and butter. I used a 12" pain(nonstick) and turned it up to 41/2 threw some butter and 2 pieces of italian white bread, which has become my new bread of choice. I toasted them on one side, meanwhile I microed my brisket and sausage for 1 min. Once the bread was done, I pilled on the sausage, added some diced white onion, some sliced pickles, and topped it all off with fan favorite French's yellow sterd.
Now for my brisket and eggs. Yes I said brisket and eggs, legit. Cracked my 2 eggs with some butter in my pan and cooked them over easy or half and half as I like to call it, best of both worlds. Once they were done, I laid the brisket down and put my perfectly cooked eggs over the top. To garnish it, I put seas salt and put the grind to my pepper and for a little heat, I add my TIO JESSY salsa habanero, found at my local hispanic meat market, and it was time to grubb.
All in, in all I was very please. I started with the sandwich as an appetizer and saved the best for last, brisket eggs. If I where to do it again I would prob just have the brisket and eggs and save the sandwich for a snack later, i got a little carried away for my first meal. Lucky today is my day off and i am currently in the moving process so I will need my GoPower.
